Wow!!! Summer is starting off awesome for us this year. We spent the first day crabbing on the Clifford Street Bridge in Portsmouth. Sitting on a pier that I've had ties to my entire adolescence was a wonderful way to spend half the day. We purchased a few more crabs than we caught, but the company was the most enjoying. I truly love my family with every fiber of my being. Sitting around, soaking up the hot sun with my kids, hubby, parents & sisters was just an irreplaceable moment in time.
Bob's heading out in the morning to try to catch us some more crab. He's got a hankering for some Chesapeake Bay Crab Cakes... looks like I know what I'm gonna be making for dinner tomorrow night! Here's the recipe...
1 1/4 teaspoons Old Bay seasoning, divided
1 1/2 teaspoons dried parsley flakes
1/8 teaspoon freshly ground pepper
1 large egg
4 saltine crackers, crushed
1/2 teaspoon Worcestershire sauce
3 or 4 drops hot sauce
1 pound fresh crab meat
Paprika
Stir together 3 tablespoons mayonnaise, 3/4 teaspoon Old Bay seasoning, and next 6 ingredients in a medium bowl; gently stir in crab meat.
Shape into 12 patties. Place on a lightly greased baking sheet.
Stir together remaining 3 tablespoons mayonnaise and remaining 1/2 teaspoon Old Bay seasoning; spread evenly on crab cakes. Sprinkle with paprika.
Bake at 350° for 20 minutes or until lightly browned.
